Jingles and a Light Tomato Salad

This week and the end of last week was crazy at work – with the impending holiday season, the kids are off the wall! But they’re still wonderful. I still love them!

My puppy has been super snuggly, too. No idea why. But she has been seriously loving on us 🙂

Anyways, with Thanksgiving this week (and my birthday, in case anyone was wondering 😉 ), I thought it might be nice to make a healthy salad to eat through the week, that’s tasty, too! Here you go!

Tomato and Goat Cheese Salad

Ingredients

Ingredients:

1 large container of grape tomatoes
1 block of goat cheese, pick your favorite kind!
Olive oil
Salt/Pepper

Step 1: Cut all of the grape tomatoes in half.

Step 2: Dice the cheese and throw both ingredients into a large container.

Step 4: Drizzle with EVOO until it has the consistency you want. (I probably used about 1/2 cup), as well as add salt and pepper to taste. Mix. And ta-da! Finished 😀

It’s super easy to make and keeps in the fridge for about 5 or 6 days. It’s awesome to take with lunch or to have with a light dinner. We all need to save up those calories for Thursday… 🙂 I love the goat cheese because it has a good flavor and makes me feel like I’m eating something really decadent. I love it!
